My all time favourite ‘tried and true’ ANZAC Biscuit recipe and judging from all the comments and how many of you made them last year, it seems lots of you think so too!

There was such a huge response to this recipe last year. So many of you baked these and said it was your new favourite. There are SO many ANZAC biscuit recipes out there and I’ve tried a lot of them over the years…all white sugar, part brown sugar, tweaked quantities etc and this is the one I love the most!

These chewy, sweet, buttery oatmeal and coconut biscuits are utterly delicious! They have caramel notes from using brown sugar and golden syrup and have to be one of the quickest and easiest biscuits to make. I can never stop at just one!

So, if you love a CHEWY ANZAC biscuit, you simply must give these a try!

I’ve provided a recipe for a beautiful buttercream, but if you wanted to make it even easier, you could cheat and use a ready made one (Betty Crocker is available at most supermarkets). The Chocolate Easter nest topping is so easy to make (recipe provided) and it really is fun decorating this cake with all your favourite mini eggs!

With yesterday being the last day of Summer, I thought I’d share my Raw Raspberry Chocolate Slice .

This recipe was one of the first recipes I shared to my site 3 years ago! Raspberry and Chocolate are such a great combination. This slice is refined sugar free, dairy free, gluten-free and vegan, making it a healthier choice when you feel like reaching for something sweet.

The base is made with dates, coconut oil, cacao powder and cashews. The raspberry centre is smooth, creamy and full of flavour with the slight tang that raspberries bring.

Each layer is made in a food processor or high speed blender so is very easy to make. The hardest part is waiting for the slice to set.

ps. I think I’ll need to make this again and take some better photos ☺️. It’s really interesting looking back on my first few posts to see how much my photos have improved since then. If you manage to catch my stories today, you can see a beautiful video from one of my followers who just made this slice!

Baking for your loved one or baking together this Valentines Day? Or just looking to treat yourself?

How about this easy and delicious Chocolate Cake filled with berry jam and whipped cream, and topped with chocolate ganache and fresh raspberries? It is sure to impress

I’ve whipped up this easy one bowl chocolate cake in a heart shaped baking tin from @wiltshireau’s Rose Gold Collection. They have a great range of baking tins and utensils and I just couldn’t resist using their heart shaped ♥️ tin for my Valentines Day bake. I had so many people asking me where to find a heart shaped tin last Valentines Day so was delighted to be gifted this one. Check out their range.

This cake was made using my Easy Chocolate Cake recipe which is my go-to for an easy (one bowl and just hand mix!) yet delicious Chocolate Cake. This cake is a favourite because it has a lovely moist texture and great chocolate flavour. The best thing is you’ll most likely have all the ingredients you need for it already in your pantry. Oh and did I mention how easy it is to make? Once the cake is made, it’s so easy to assemble and if you want to cheat a little and buy a ready-made ganache/frosting, I’ll pop the one I sometimes use in my stories/highlights.

Tip: the recipe uses buttermilk which is the only ingredient I don’t usually have but it’s super easy to make your own with just milk and lemon juice (or white vinegar).
To make 1 cup of buttermilk, simply add 1 tbsp lemon juice (or white vinegar) and top with milk to make 1 cup. Stir lightly and let sit for a few minutes then it’s ready to go!

Tell me something you look forward to eating at Christmas? 🎄

For me it’s hands down a glazed ham and Trifle - oh and my mother-in-law’s Sweet Potato croquettes, succulent Turkey, gravy and my mum’s Pineapple Custard Pie! ☺️

A Christmas trifle is my favourite festive dessert - I love anything that involves custard.

Here is my Cookies and Cream Trifle - it’s actually a friend’s recipe that I just love. It’s made with layers of Baileys Irish Liqueur soaked sponge, berries, crushed oreo cookies, store-bought thick custard (you can use both chocolate and vanilla or just vanilla) and cream. So delicious and a great way to finish your Christmas feast! 🎄
My recipe makes a large trifle but can easily be halved for up to 8 ppl.

I’m just loving this range from @bonnemaman_au - it’s their
‘More Fruit Less Sugar’ range. Have you tried it?
Even more intensely fruity than a classic Bonne Maman conserve, the range is made with an exceptionally high percentage of ripe fruit. Bonne Maman More Fruit Less Sugar has a slightly softer set and naturally contains 30% less sugar than the traditional range. The conserves range includes Raspberry, Strawberry, Red Fruit Spread and Apricot flavours.

If you are after a super quick and easy dessert to have over the festive season, I thought I’d show you one way I use this product.
Here I’ve used the Strawberry Spread to jazz up some mini meringues which I bought from the supermarket. You’ll also need cream and fresh berries (use any berries you like).
All you do is slice the berries in halves or quarters and add to a bowl along with some of the @bonnemaman_au Strawberry spread. Mix together so all the fruit is nicely coated.
Whip the cream and add a good dollop onto the meringue nests and spread out, then top with the berry mix. So easy and so delicious! I’ve also sprinkled a little freeze-dried berries over them at the end (optional).
You can do this with a full size pavlova base too. Just increase the amount of berry mix.

You could also use the fresh berry and spread mix in ice-cream sundaes or serve alongside a chocolate dessert. There are so many ways you can use this berry mix.
ps. The spread on its own is delicious on scones too (see last pics).

With the silly season well and truly started and Christmas just around the corner (just over 2 weeks away…gulp!), I thought I’d share some dishes that I love to entertain with around this time of year.

These recipes are easy to make with most able to be prepared a day or two in advance and are always a crowd favourite.

1. Cauliflower Fritters - delicious as they are, served warm and piled on a plate with lashings of grated Parmigiano Reggiano cheese or serve them at room temperature with toppings - sour cream and chives or sour cream, salmon and chives are always festive (great for gf, vegetarians).
2. Thai Fish Cakes - one of my absolute favourite canapés. Can also serve them with a vermicelli salad as a meal - delicious flavours and all made in a food processor. Gluten free
3. Smoked Salmon Dip - all made in a mini food processor or blender. Great served on crostini as a pass around nibble (top with fresh dill sprigs) or serve as a dip for casual entertaining. Can be made a day or two ahead.
4. Easy Avocado Pistachio Dip - another great dip that can be made in a mould or served as a dip - light and perfect on those warm days
5. Salmon Tartare - another favourite of mine. Great flavours and can be served on top of crostini as a canapé or dish up in a bowl for ppl to help themselves.
6. Easy Candied Walnuts - I often make a batch up (super quick to make) and keep in a jar as they are wonderful in salads and on cheese boards - these with creamy D’Affinois cheese and quince paste - oh my!
7. Sweet and Spicy Nuts - so addictive and great to have a jar of these on hand for a snack with drinks. They last 3 weeks so can be made now. They also make a wonderful gift - pop some Christmas ribbon around a jar and give to your nearest and dearest.

White Chocolate Rocky Road - another great Christmas treat option for the white chocolate fans. I think it looks so festive with the white chocolate, cranberries, pistachios and freeze-dried berries (I use raspberries, cherries or strawberries).

I often find white chocolate to be too sweet but the nuts and tart berries in this really help balance it out. It’s very moreish!

This wonderful Summer salad is made in minutes and is always a crowd pleaser.

I’ve been making this Roasted Asparagus and Tomato Salad for over 10 years. The combination of roasted asparagus and tomatoes with parmesan and balsamic glaze is wonderful. It is a great side dish for steak, lamb, fish - almost any protein really. It can be served warm or at room temperature making it ideal for entertaining.

Did I mention how quick and easy it is to make?

If you’re looking for Christmas salad ideas, this is one I often make as it can be made ahead of time and goes really well with ham , turkey etc. Also the colours of this salad are very much on point for Christmas ☺️🎄.

It’s a Sticky Date Pudding kind of day! 🌧

There’s just so much to love about Sticky Date Pudding, especially when it’s served warm with ice-cream! I just love the combination of warm puddings and ice-cream.

I’ve been making this pudding for years and it never fails me. A tried and true recipe that delivers on flavour and is beautifully moist. The caramel sauce is a cinch to make and both the pudding/cake and sauce can be made in advance and reheated, making it perfect for entertaining.
Optional: add fresh figs if they’re in season.

A delicious dessert that will impress your family and friends and is easier to make than it looks…bake the cake, make the sauce…drizzle the caramel sauce over the cake (save some for ppl to add more themselves which they will 😉) and serve with cream or ice-cream. Hint: when serving ice-cream I always take it out of the fridge 10-20 minutes before serving. It softens slightly making it much easier to scoop or quenelle.
The cake itself is also just wonderful eaten on its own as a cake.

With beetroots in season here in Australia, I love making this salad. Beetroot and feta go so well together (earthy, sweet and salty) and adding candied walnuts take it to the next level!

I also use pomegranate molasses in my dressing and the sweet sour flavours just finish this salad off beautifully.

I know there are lots of variations of this classic salad out there but I just love this one.

A great salad for family meals or for entertaining friends/family. I have been known to eat this salad on its own but of course it’s a wonderful accompaniment to meats or other dishes. Great to eat now and as the weather starts to warm up in the coming months.

Can confirm that these Fig, Orange and Walnut Florentines were a hit!

I simply replaced the glacé cherries and sultanas with semi-dried figs and candied Orange. I also used walnuts instead of peanuts.

I love that you can change up these super easy to make florentines with different fruit and nut combos and we all know fig, Orange, walnuts and almonds are a winning combination.
ps. You could use dried apricots in place of the candied Orange

Have you tried my Whole Meyer Lemon Cake yet? It is inspired by the well known Whole Orange Cake but made using Meyer lemons.

I’ve had so many lovely comments from those of you who have made it. I also had a lot of people ask if they can use other varieties of lemons (Meyer lemons are less acidic than other lemon varieties), so I have tested and added instructions so any lemons can be used.

With an abundance of lemons around at the moment, now is the perfect time to make this easy ‘5 ingredient’ wonderfully moist and dense flourless lemon cake. This cake uses 3 whole lemons which are first boiled and cooled (can be done in advance). Once this step is done the cake is prepared in less than 5 minutes and then popped in the oven to bake. Made with almond meal and no butter or oil, this cake is both #glutenfree and #dairyfree

We love this cake simply dusted with icing sugar and served with a dollop of creme-Fraiche or double cream. I have also served this cake topped with whipped cream and a blueberry and blackberry compote (swipe to see) which went down a treat! A cake that can be served with a cuppa or as a dessert.

I have made this cake in both a 20cm cake tin for a softer centre, and a 24cm tin for a more set centre.

Cake Baking Tip: Always cover your cakes loosely with tinfoil during baking if they are browning too quickly. Also when boiling the lemons, really boil them and top up with water if needed. You want the lemons to be really soft (see last pic). Remove any pips and insides. For best results, weigh the boiled lemons (once pips etc discarded).

These delicious and easy to make Date and Walnut Muffins are a real family favourite.

This recipe results in a beautifully moist muffin or loaf with great flavour. My mother’s friend has been baking these muffins for years and kindly shared her recipe. Now my mum makes them for our family. I also love that this recipe can be made in a loaf tin as well so I’ve included instructions for both.

This is a one bowl recipe and only a spoon is required to mix it. There’s also no need to melt or soften the butter beforehand as when the boiling water is poured into the mixture, this melts the butter! Swipe to see how simple they are to make ➡️

Perfect with a cuppa, in school lunch boxes or even as a dessert (heat and serve with custard and/or ice cream). They also freeze really well. I hope you enjoy this recipe as much as my family does.

These Florentines are an Australian and NZ take on the original using sweetened condensed milk to bind instead of a caramel, making these very simple to make. A great easy recipe to make with children.

Made with cornflakes, glacé cherries or cranberries, sultanas, nuts (I’ve used roasted peanuts and flaked almonds) - everything but the chocolate is added to a bowl and mixed together. Super easy! Once baked they are dunked in melted dark or milk chocolate.
They have a lovely crunch and are chewy on the inside. Covered on one side in chocolate, they are sweet, delicious are very moreish!

The perfect biscuit to have any time of the day.
